For nearly a century, the Patre family has been the steward of Ratnagiri Estate, producing specialty coffee and fine pepper. Ashok Patre, the third generation to work the land alongside his wife, Divya, is dedicated to securing the farm’s future. Through innovation and a meticulous approach, they’ve transformed Ratnagiri into one of the most impressive operations in India and the coffee-producing world.
Mr. Patre’s processing methods are both intentional and groundbreaking, tailored to Indian terroir and varieties. Recognising the unique potential of his coffee, he has developed techniques that manipulate flavours to create something truly exceptional. While such methods can sometimes yield over-processed results, his coffees stand out for their remarkable cleanliness, complexity, and balance. Guided by tireless research and scientifically proven techniques, Mr. Patre controls fermentation with precision, crafting coffees that are as unique as they are delicious.
During visits to Ratnagiri in early 2024, we witnessed the completion of a state-of-the-art processing facility, more akin to a winery or brewery than a traditional coffee operation. Watching Mr. Patre innovate feels like a glimpse into the future of specialty coffee. One standout offering is a “Culture Process” coffee, or co-ferment, crafted with a mix of coffee cherry, specific yeast strains, lactic acid bacteria, and fresh rose, jasmine, and lavender. Fermented for 72 hours in stainless steel tanks, the coffee then dried slowly over 29 days, resulting in an extraordinary cup. We’re honoured to collaborate with Ratnagiri Estate and share these remarkable coffees, with even greater prospects on the horizon.
