This exceptional coffee originates from a renowned highland region in the southern part of Minas Gerais, Brazil, an area celebrated for its quality-focused, small-scale coffee farming. Grown on sloping terrain at high elevations, the beans are cultivated by a collective of dedicated local producers who prioritise quality over quantity.

The cooperative of growers operate their own cupping laboratory and employs trained specialists to evaluate and identify outstanding lots suitable for microlot designation. Sustainability, community empowerment, and a commitment to excellence are central to the cooperative's mission.

This coffee is naturally processed, also known as dry processing, one of the oldest and most traditional methods of coffee preparation. In this process, the whole coffee cherry is dried intact, allowing the fruit’s sugars to influence the flavour of the bean.

Cherries are spread out on raised drying beds or patios, where they are carefully turned and monitored throughout the day. This slow, attentive process lasting anywhere from three to six weeks, ensures even drying and helps prevent unwanted fermentation. Once the cherries reach an ideal low moisture level, they are hulled to remove the dried outer layers.

Natural processing often imparts a subtle fruitiness, balanced sweetness, and fuller body, with lower acidity qualities that are beautifully expressed in this carefully crafted Brazilian offering.
