Produced by Slope Coffee, this lot is drawn from a Blang village in the Jingmai Mountain range of Xishuangbanna, Yunnan, at roughly 1,800 metres above sea level. Elevation brings cooler temperatures and persistent mist, slowing cherry maturation and allowing sugars to form with restraint. Coffee is cultivated on terraced slopes beneath forest canopy rather than exposed ground, preserving soil health and moderating growth. The profile reflects that environment, composed, clean, and absent of bitterness, built for repetition rather than spectacle.
This washed Red Catimor carries a measured red apple acidity, biscotti-like sweetness, and a refined green tea structure. It moves with clarity and finishes precise, without weight or excess.
Processing is orthodox and exacting. Fully ripe cherries are hand selected and floated to remove defects, then pulped and briefly fermented to loosen mucilage before thorough washing. Drying is conducted slowly at low temperatures to stabilise clarity and balance. The objective is deliberate and controlled, to remove distraction and allow the inherent character of the coffee to stand without interference.
