Guji, a region located in Ethiopia’s Southern Nations, Nationalities, and Peoples’ Region (SNNPR), is known for producing some of the most exceptional coffees in the country. Situated in the highlands of southern Ethiopia, with altitudes ranging from 1,500 to over 2,200 meters above sea level, the region offers ideal conditions for coffee cultivation. Guji coffees are celebrated for their complexity, bright acidity, and rich flavour profiles, often characterised by vibrant citrus notes, floral undertones, and a noticeable fruitiness. With flavours that include jasmine, berry, and stone fruit, Guji coffee tends to have a dynamic and bold taste, making it distinct from other Ethiopian coffees like those from Yirgacheffe or Sidamo.

The Harsu washing station, located near the town of Shakiso in the Guji Zone, plays an essential role in processing the coffee produced by local farmers. At this washing station, coffee cherries are meticulously sorted, pulped, and fermented before drying, which results in clean, bright flavours that Guji is known for. The coffee processed here is primarily sourced from smallholder farmers who grow heirloom Ethiopian varieties, and the washing station’s careful processing helps to enhance the clarity and quality of the final cup. As a result, Harsu coffees often display the signature Guji characteristics, including bright citrus, floral notes like jasmine, and juicy tropical fruits such as mango or pineapple.

Beyond producing high-quality coffee, the Harsu washing station supports local farmers by providing training on sustainable farming practices and improving both the quality of their coffee and their livelihoods. The station also works to ensure environmental sustainability by promoting water conservation and proper waste management. As a result, Harsu coffee is prized for its clean, vibrant flavours, as well as its role in supporting the communities that cultivate it, making it a popular choice among coffee lovers and roasters worldwide.
