Tucked into the lush highlands of Callayuc in the Cajamarca region of northern Peru, La Chirimoya is a remarkable coffee operation led by Héctor Saavedra. For many years, Héctor has been at the heart of his community’s coffee journey, and today he guides a close-knit collective of ten farming families toward excellence and opportunity.

Situated at approximately 1,600 metres above sea level, the farm benefits from a cool mountain climate that gently slows cherry maturation, nurturing rich, well-balanced flavours. The main varietal cultivated here is Yellow Caturra, known for its vibrant and expressive cup characteristics.

Quality care begins with selective hand-picking at peak ripeness. Post-harvest, the cherries undergo a thorough washed process to remove all mucilage. They are then dried under the sun for around 15 days, typically on concrete patios, to preserve clarity and depth of flavour.

Beyond cultivation, Héctor is an inspiring leader in his region. He is actively fostering agritourism initiatives, welcoming visitors to his farm, hosting coffee auctions and working closely with local associations to support sustainable growth for his community and empower the families he leads.

Though modest in size, La Chirimoya embodies a powerful combination of tradition, quality and forward thinking. Under Héctor’s passionate guidance, this farm and the community around it shine as a vibrant example of what Peruvian specialty coffee can achieve.
